Zucchini Bread
(adapted from the recipe from the Carnegie-Mellon University Dinner Co-Op website)
2 cups sugar
1 cup olive oil
2 eggs
1 tsp molasses
3 teaspoons vanilla
2 cups grated zucchini
1 teaspoon salt
1 teaspoons baking soda
1/8 teaspoon nutmeg
1/2 teaspoons baking powder
3 cups flour
3 teaspoons cinnamon
1 cup of Nuts, Raisins, Currants, Craisins, Chocolate Chips or a combination thereof

INSTRUCTIONS:
(Makes 2 loaves)
Preheat oven to 350 degrees. Combine wet ingredients in large mixing bowl, then add dry ingredients and mix thoroughly. Pour batter into greased and floured bread pans, bake for one hour.
