Hearty Bean Soup with Smoked Pork Neck
- 1 lb Mixed Bean (I use Goya 16 bean soup mix $1.60)
- 1 Medium Onion chopped ($0.40)
- 3/4 Lb Smoke Pork Neckbones ($1.50)
- 6 Cups boiling water
- 2 Bay Leafs ($0.20)
- 3 Cloves Garlic ($0.10)
Extra stuff you can add:
- To make it fancy, subsitute Neckbones for or simply add chorizo, bacon or Italian sweet sausage. Be sure to brown them first to add that carmelized flavor.
- Add Celery, carrot or any vegetables you want, really no rules!
- To make it spicy add Tapatio or El Yucateco Chile Habanero hot sauce

Put all the ingredients in a crockpot and set the cooking temperature on high. Let cook for at least 4 hours. Voila it’s done! Add olive oil, black pepper and salt to taste.
If you don’t have a crockpot you can use a normal pot, boil the water first and add the rest of ingredient. Wait till boiling than cover and simmer until the bean is tender. Make sure to stir the bottom from time to time to prevent burning.
The advantage of using a crockpot is it never overcooks and makes the beams soggy and mushy. The low temperature prevents the bottom from burning hence makes the soup smooth and creamy and help the beans remains its silky texture.

All together $3.80 serves 4 people. To be ultra cheap ass use one type of bean instead of the 16 beans soup mix, that will lower your cost by $0.50.
