Healty Nachos
- 1/3 cup of chopped broccoli
- 1/2 a carrot, chopped
- 5 large whole wheat crackers (I recommend Red Oval Stoned Wheat thins)
- 1/3 cup of chickpeas
- a few diced mushrooms
- 4 tablespoons of spaghetti sauce
- 1/4 cup of shredded mozzarella

INSTRUCTIONS:
1. In pot of boiling water, cook vegetables and chickpeas.
2. Lay crackers on a plate. Spread spaghetti sauce over them.
3. When vegetables and chickpeas are tender, drain, and scoop them onto the spaghetti sauce covered crackers. Sprinkle mozzarella cheese on top.
4. Put plate in microwave for 1 minute. Garnish with pepper.

COSTS:
All the ingredients in this meal probably come to about $8 or $9 (the cheese will be the most expensive ingredient), but then you have enough to make this meal at least 4 times. It's a pretty good deal, considering the meal is fairly healthy, filling, and yummy.
