INSTRUCTIONS:
This is a simple one. Slice the peppers, throw into a nonreactive pot. Add some garlic cloves, baby carrots sliced length-wise, you get the idea. Just as much of each as you want. Cover with white vinegar and about a quarter cup of Extra Virgin Olive Oil (no, I won't abbreviate it...). Boil, simmer for 5 minutes. Dump into a sterile jar and keep in the refrigerator and use as a side dish.
The hotter the peppers,, the hotter the vegetables will get. I usually use Jalapenos but recently made this with those hot round red peppers and the stuff came out LETHAL. Love it with homemade Falafel.
