No PineNuts Pesto
I been in the mood to try new things and eat stuff I typically would not, Pesto is one of those dishes I was never too fond of, most of the time it is made with basil and pine nuts, the basil I love but the pine nuts not so much. So I decided to alter it a bit and this is what I came up with.
1 1/2 - 2 cup of basil
A hand full or almonds or about 3/4 of cup
3/4 cups of olive oil
2 tablespoon of water
Pinch of salt
Pinch of black pepper
5-7 cloves of lg to md garlic
1/4 cup of grated Parmesan cheese

INSTRUCTIONS:
My result tasted just like ordinary pesto, but more nutty and less pinenutty, the color came out beautifully olive green however, I want to add that my recipe came out a little greasy so if you want I would substitute water for oil. Maybe try 1/4 cup of water and 1/4 cup of olive oil.
