Everybody said Carl’s has the most authentic Philly Cheesesteaks in New York City. So I gotta give it a try. Honestly, I am a rookie at this, I have only eaten Cheesesteak several times and I don’t quite know how it should taste like.
We got the Cheesesteak with Cheeze Whiz ($6.50). Because the lady in front of me got a big order I have to wait quite long (15-20 mins) and that give me the time to observe how they make it. First on the griddle, they grilled big piles of thinly sliced sirloin and they carmelize whole bunch of chopped onions separately and set them aside. When they got your order they took the meat and mix it with onion, squeeze some oil, put your cheese of choice (only for Provolone or American Cheese, for Whiz they directly squeeze onto the bun) on top of the mix and squeeze some water in it to steam and make the cheese melt. Then transfer the mix onto the bread.

I thought it is gonna be very greasy but it is not at all. The sandwich size is pretty big and the bread is very fresh and soft, hold up the tasty steaks really well. I cannot say the meat is very juicy but it’s not dry at all. I think it depends on how busy they are, the busier the less time the steak sits on the griddle and the juicier the meat is. The only thing I can think of to complain about is not enough Whiz and onions.
